Bullboar Sausages

I was watching the Food Lovers Guide on SBS last night and saw this recipe. I decided that it was time for me to have a go at making more sausages and these sounded pretty nice. They are a 50/50 combination of beef mince and pork mince with red wine and some spices. I have an electric mincer and used some chuck steak and a pork shoulder for the meat because there is a little bit of fat in the meat but not too much.

Ingredients
  • 1.5 Kg beef mince
  • 1.5 Kg pork mince
  • 2 teaspoons ground white pepper
  • 250 ml red wine
  • 2 teaspoons salt
  • 4 cloves of garlic
  • 2 teaspoons nutmeg
  • 1 teaspoon ground cinnamon
  • sausage casings (natural hog casings)
Method
  • Place the garlic and red wine in a saucepan and bring to boil then allow to simmer for 5 minutes. remove from the heat and cool
  • Mince the beef then mix in half of the red wine. Place the mince in the fridge over night and put the rest of the wine aside for now.
  • Mix together the salt, pepper, nutmeg and cinnamon.
  • Mince the pork meat and mix in 1/2 of the spice mix. Place the pork mince in the fridge over night.
  • The next day mix the rest of the red wine into the beef mince and the rest of the spice mix into the pork mince.
  • Mix the 2 mince meats together and if you have a mincer put the meat through the mincer on the finest blade.

  1. This is a recipe that is very similar to one produced in the Upper Peninsula of Michigan called cudighi.
